Twisted Courgette, Pepper & Sun dried Tomatoes

Get your festive do off to the best start with these tasty, finger-friendly appetisers. Twisted courgettes with peppers and - everyone's favourite - sun dried tomatoes. Deceptively easy to make and the perfect precursor to a remarkable main, trust us, they’ll go down a treat.

Twisted Courgette, Pepper & Sun-dried Tomatoes 2


2 large tomatoes
1 large sweet pointed pepper
2 medium courgettes
2 tbsp extra-virgin olive oil
½ tsp salt
¼ tsp ground black pepper



  1. Prepare tomatoes ahead of time - slice into quarters, place in your food dehydrator, cover with olive oil and leave to dehydrate for 24 hours
  2. Slice pepper lengthways and cut courgette lengthways into ½” strips. Toss in a bowl with olive oil, salt and pepper
  3. Cook on a griddle pan for 4 minutes per side, until tender. Press down on each strip with a spatula to get more of a chargrill. Set aside to cool
  4. Layer a slice of courgette on top of a pepper. Carefully roll up and secure with a cocktail stick if necessary. Continue with the remaining courgette and pepper slices
  5. Serve at room temperature
