Sweet & Sticky Cinnamon Rolls with Cream Cheese Icing

Fall in love with this American breakfast favourite. Buttery, spicy swirls nestled within lavishly glazed soft rolls. Our mouths are watering already.

Sweet & Sticky Cinnamon RollsIngredients

For the dough

  • 300ml warm milk
  • 2 ¼ tsp active dry yeast
  • 100g caster sugar
  • 6 tbsp unsalted butter, very soft
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • 700g flour

For the filling

  • 4 tbsp ground cinnamon
  • 170g brown sugar
  • 225g unsalted butter, very soft

For the icing

  • 100g cream cheese
  • 100g milk or cream
  • ½ tsp vanilla extract
  • 140g icing sugar


  1. To make the dough: add the warm milk to your stand mixer bowl and sprinkle the yeast on top. Set aside for 5 minutes or so, until slightly bubbly
  2. With the whisk attachment, beat in the sugar, softened butter, eggs, vanilla and salt. Add in the flour bit by bit, until the dough has a thick consistency
  3. Switch to the dough hook and knead for about 5 minutes or until the dough is smooth
  4. Line a bowl with butter or oil; shape the dough into a ball and place in the bowl. Cover and let the dough rise for around 2 hours, or until doubled in size
  5. For the filling: add the brown sugar, ground cinnamon and butter to your stand mixer bowl. Use the beater attachment to cream the mixture together
  6. Lightly grease two large cake tins. On a floured surface, roll out the dough into a large rectangle. Coat the dough with the creamed butter mixture – making sure to spread it almost up to the edges
  7. Lengthways, roll up the dough as tightly as you can
  8. Once you have rolled the dough into a tube-shape, use a knife to cut into around 24 rolls
  9. Divide the rolls into the cake tins and let them rise for about 45 minutes, or until the rolls double in size
  10. Preheat your oven to 180°C and bake for about 20 minutes, or until just beginning to brown
  11. For the icing: add the cream cheese, milk, vanilla extract and sugar to your stand mixer bowl and use the beater attachment to combine
  12. Once you’ve achieved a smooth consistency, drizzle the icing over the hot rolls with a fork and eat whilst still warm from the oven
