Slow Cooker Spanish Chicken & Chorizo Stew

Slow Cooker Chicken, Chorizo & Chickpea Stew 2

  • Ingredients

  • 4 skinless, boneless chicken thighs, cut into 2 inch pieces
  • 4 chorizo cooking sausages, chopped into thick slices
  • 400g can chopped tomatoes
  • 2 carrots, roughly chopped
  • 1 red onion, sliced
  • Juice of 1 lemon
  • 2 garlic cloves, sliced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 400g can chickpeas, drained
  • 1 handful flat-leaf parsley, chopped



  1. Combine chicken, chorizo sausages, tomatoes, carrots, onion and lemon juice in your slow cooker
  2. Sprinkle garlic, paprika and cumin on top and stir in
  3. Turn slow cooker on, set to low, cover and cook for 8 hours
  4. During the last hour of cooking, stir in the chickpeas
  5. Sprinkle parsley over the top before serving
