Slow Cooker Rosemary & Garlic Chicken

Say adios to drab midweek meals and hello to unbelievable flavour with this utterly divine slow cooker rosemary & garlic chicken. Easy enough for your average weeknight yet impressive enough for guests, this delicious dish ticks every box.

  • 3 carrots
  • 1kg chicken drumsticks
  • 2 tbsp fresh rosemary, chopped
  • 2 tsp smoked paprika
  • 2 ½ tsp salt
  • 1 ¼ tsp freshly ground pepper
  • 3 tbsp olive oil
  • 12 garlic cloves, sliced
  • 115ml chicken stock
  • 1 tsp olive oil
  • 900g small new potatoes, chopped
  • 2 large red peppers, chopped



  1. Arrange carrots in a single layer at the bottom of your slow cooker
  2. Remove the skin, and any excess fat, from the drumsticks
  3. In a small bowl, mix together the rosemary, paprika, 1 ½ teaspoons salt and 1 teaspoon pepper. Rub the spice mixture over each chicken piece and leave to one side
  4. Add 3 tablespoons of olive oil and garlic to a large frying pan and sauté over medium heat for 2 minutes or until golden brown
  5. Remove the garlic and transfer to a bowl
  6. Cook half the chicken drumsticks in the oil in the frying pan for 4 minutes or until golden brown. Transfer to the slow cooker, leaving the drippings in the pan. Cook the remaining chicken in the same way and add to the slow cooker, again saving the drippings
  7. Add the chicken stock and garlic to the drippings in the pan and cook for 1 minute, stirring continuously. Pour over the chicken in slow cooker
  8. Cover and cook on high for 2 hours
  9. In a large bowl, toss the potatoes and peppers with 1 teaspoon of olive oil and the remaining salt and pepper. Add to slow cooker
  10. Cook for a further 2 hours
  11. Transfer to a casserole dish and serve
