Slow Cooker Roasted Sweet Potato & Rosemary

As a simple side – this is one of the best. Slow cooker roasted sweet potato & rosemary, perfect for pairing with a lamb shank or a whole roast chicken on a weekend or even with lamb chops for a simple midweek supper.

Slow Cooker Paleo Veggies

Ingredients


2 large sweet potatoes, chopped into smaller pieces
1 red onion, chopped into larger
Olive oil
Salt and pepper
Handful rosemary sprigs, bashed with a knife

Method


 

  1. Pour some olive oil into a frying pan and fry the red onion for a few minutes
  2. Whilst the onion is frying, in a large bowl toss the sweet potatoes with a light coating of olive oil, salt and pepper
  3. Put the sweet potatoes at the bottom of the slow cooker and add the onions on top
  4. Add in the rosemary sprigs and cook on low for 8 hours
  5. Serve up with your favourite joint
