Slow Cooker Mediterranean Lentil Soup

Soup-erbly comforting, nourishing and satisfying: a steaming bowl of this flavourful lentil and vegetable soup will leave you wonderfully full. Packed with nutrients and over-flowing with flavour, this slow cooker Mediterranean lentil soup is one of those super easy, go-to dishes you’ll make time and time again in your slow-cooker.

Slow Cooker Lentil Spinach Soup



  • 100g green or brown lentils
  • 2 medium onions, diced
  • 2 celery sticks, finely sliced
  • 2 carrots diced
  • 1 medium sized potato, peeled and diced
  • 1 clove garlic, finely chopped
  • 1 tsp ground cumin
  • Zest of 1 small lemon
  • 600ml vegetable stock
  • Juice of half a small lemon
  • 300g frozen spinach, thawed
  • A large pinch of salt and pepper



  1. Rinse the lentils under cold water until the water runs clear. Place them in your slow cooker
  2. Add all the vegetables, except the spinach, to the slow cooker. Add the garlic, cumin, lemon zest and vegetable stock, place the lid on top and cook on high for 4 hours
  3. Add the lemon juice and spinach, season and cook on high for a further 20 minutes. Serve with crusty bread
