Slow Cooker Chicken & Veggie Broth

Sometimes it’s the simplest dishes that really hit the spot. Meat, veg and broth – hearty, tasty and, most importantly, straightforward. This slow cooker chicken & veggie broth is one of the easiest paleo slow cooker recipes you’ll ever make: it’s just chop, add and cook.

Chicken & Veggie Broth


2 medium or 1 large carrot, chopped
Chicken breast, cub into smaller chunks
2 peppers, chopped
2 handfuls of mushrooms, halved
1 onion, chopped
1 tin chopped tomatoes
1 small broccoli, cut into florets
1 stalk of celery, chopped
1L chicken stock
Squirt of tomato paste
1 tsp paprika
1 tsp salt
1 tsp dried sage
¾ tsp ground turmeric
½ tsp chilli powder
1 ½ tsp ground cumin
½ teaspoon gram masala



  1. Place the carrots at the bottom of the slow cooker
  2. Place the chicken pieces on top, then add the rest of the veggies
  3. Add the tomato paste and all of the spices to the chicken stick and mix
  4. Pour the chicken stock in the slow cooker and add the chopped tomatoes
  5. Cook on low for 7 – 8 hours, until the chicken is tender and the root vegetables have softened
  6. Dish up and dig in
