Seasoned & Spicy Vegetable Fritters

Light, crispy and sensationally seasoned, these irresistibly spicy vegetable fritters are oh-so-easy to prepare. Rustle up this popular Indian street food in your air fryer for a healthier, tastier take on a deep-fried favourite.

  • 3 courgettes
  • 1 small onion
  • 2 garlic cloves
  • 1 egg
  • 70g whole wheat flour
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • ½ tsp cumin powder
  • Pinch of salt and black pepper
  • Olive oil spray


  1. Grate the courgettes and onion; crush, mince or finely chop the garlic cloves
  2. Place the courgettes in a bowl and pat dry with a kitchen towel
  3. Either use your food processor, stand mixer or hand whisk the egg, flour, turmeric powder, red chilli powder, cumin powder, salt and black pepper
  4. Once combined, add the mixture to the courgette bowl and add the onion and garlic; mix well
  5. Place baking paper onto the air fryer baking tray; spoon out the mixture to form smallish patties and lightly coat with oil
  6. Set your air fryer to 200°C and cook fritters for 10 minutes until deliciously crispy
