If you’re gluten-free or looking to adopt a more plant-based diet, here’s Elisa’s top baking tips.
- Add a bit of tapioca flour when baking as it helps to keep the consistency light and fluffy
- For those looking for plant-based alternatives in dessert making, you can substitute eggs with a mashed up ripe banana (which adds sweetness too.) Or, you can use “a flax egg”, which is made with milled flax seeds and water, or aquafaba – which is basically chickpeas and water whisked up until it reaches a meringue-like consistency. - If you want a healthier dessert without losing the taste, try swapping normal sugar for coconut sugar, replace butter or margarine with coconut oil, or use wholemeal or spelt instead of white flour.
