Parmesan Pumpkin Fritters with Parsley

Creamy pumpkin meets tangy parmesan and fragrant parsley in this wonderfully flavourful fritter. Crispy on the outside with a melt-in-your-mouth core, these addictive puffs of pumpkin are comfort food at its finest.

Pumpkin Fitters 2


160g shredded pumpkin
32g grated parmesan cheese
25g parsley
1 egg, lightly beaten
3 tbsp flour
2 tbsp milk
1 tsp baking powder
Salt and pepper to taste
Olive oil for frying
Blue cheese (optional)



  1. Par boil the pumpkin until soft, remove from the hob, drain and then set aside to cool
  2. Mash the pumpkin until smooth
  3. In a separate bowl, mix the milk, egg and cheese together
  4. Mix in the pumpkin, then the parsley
  5. Sift the flour, baking powder, salt and pepper over the top and mix well
  6. Heat the olive oil in a large frying pan over medium-high heat
  7. To form individual fritters, fry heaped tablespoons of the mixture until golden on both sides and cooked in the centre
  8. Serve immediately with a hearty portion of your favourite blue cheese
