Cauliflower Sushi Salad with Smoked Salmon

A twist on a salmon classic – you won’t believe ‘cauliflower rice’ is anything but the real thing. Super healthy and easy to cook in your steamer.

  • ½ head of cauliflower
  • 100g smoked salmon
  • 2 tbsp apple cider vinegar
  • 2 tsp sesame oil
  • 1 tsp honey
  • Juice of half a lime
  • ½ tsp salt
  • 1 tbsp black sesame seeds
  • ½ avocado, thinly sliced
  • 6 radishes, thinly sliced
  • Handful of rocket
  • Dash of soy sauce
  • A few springs of coriander


  1. Cut up the cauliflower into small chunks and blend in your food processor until its achieved a rice-like consistency
  2. Set up your steamer; place the pulped cauliflower in the rice-container and steam until thoroughly cooked – this should take around 2 – 3 minutes
  3. Meanwhile, grab a bowl and mix together the sesame oil, vinegar, lime juice, salt and honey
  4. Take the rice out of the steamer and place in your serving bowl; pour the sesame oil mixture over the rice and mix in
  5. Add the avocado, smoked salmon and radish then sprinkle over the coriander and a few sesame seeds
  6. Serve with a drizzle of soy sauce
