Jolly Holly Gingerbread Men

Sugar and spice and all things nice; that’s what these classic Christmassy biscuits are made of. Turn it into a fun family affair by getting the kids involved – the smells of ginger, cinnamon and nutmeg are enough to tempt even the most reluctant little baker.

350g plain flour
2 tsp ground ginger
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 tsp bicarbonate of soda
100g butter
175g light brown soft sugar
4 tbsp golden syrup
1 medium egg



  1. Preheat oven to 190°C / Gas Mark 5
  2. Combine the flour, ginger, cinnamon, nutmeg and bicarbonate of soda in a bowl then rub in the butter until crumbly
  3. Add the sugar, syrup and egg and mix until it forms a firm dough
  4. Using a rolling pin, roll out the pastry onto a well dusted surface until around 5mm thick all over
  5. Using cookie cutters, cut the gingerbread men out and place on a greased or non-stick baking tray
  6. Bake for 10 - 15 minutes until golden brown
  7. Remove from baking tray and leave to cool on a wire rack
  8. Decorate with piped icing
