Jammy Granola Bars

Quick breakfast bars, pre-workout energy boost or a cheeky snack. These nifty jammy granola bars are worth every rich, buttery, jam-filled bite.

Jammy Granola Bar


200g walnut or pecans
250g brown sugar
450g (3 cups) oats
150g all-purpose flour
150g whole wheat or spelt flour
1 ½ tsp salt
1 tsp baking powder
240g unsalted butter, cut into small pieces and softened to room temperature
2 jars fruit jam


  1. Preheat your oven to 175°C and line a baking dish with parchment paper
  2. Pulse the nuts in your blender until coarsely chopped
  3. Place in a large mixing bowl and mix in the brown sugar and 2 cups of oats
  4. In your blender, combine the remaining oats with the all-purpose and whole wheat flours, salt and baking powder. Blend until oats are crumbly. Add the butter and blend until the butter is fully mixed in
  5. Combine the mixture with the chopped nuts, sugar and oats in the mixing bowl; whisk, or mix with a long-handled spoon, until the ingredients are fully blended and crumbly in texture
  6. Layer half of the granola mixture onto the lined baking dish and press down firmly; make sure it’s evenly spread across the dish
  7. Dollop the jam on top, then spread across the granola mixture
  8. Layer the second half of the granola mixture on top of the jam; patting gently to create a flat surface
  9. Bake for around 30 – 35 minutes or until the top is lightly browned
  10. Remove from the oven and allow to cool completely for an hour or so; slice into bars and tuck in!
