Homemade Gingerbread Christmas Tree

Deck the halls with boughs of holly; and make sure the dinner table is decked out with this showstopper of a centre piece too. Stackable, shareable and as festive as it gets, this tasty tree looks almost too good to eat.

Homemade gingerbread tree


350g plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
½ tsp ground nutmeg
125g butter, cut into small cubes
175g light soft brown sugar
1 egg
4 tsp golden syrup
1 egg white
140g icing sugar



  1. Preheat oven to 180°C / 350°F / Gas Mark 4
  2. Sift the flour, bicarbonate of soda, ginger, cinnamon and nutmeg into your food processor bowl. Add the butter and mix until breadcrumb consistency. Stir the sugar in manually
  3. In a separate bowl, beat the egg and golden syrup together then transfer to the food processor bowl. Pulse until the mixture comes together to form a dough
  4. Remove dough from food processor, knead lightly, wrap in cling film and refrigerate for 20 minutes
  5. On a lightly floured surface, roll the dough out to around ½ cm thick. Cut shapes out using different sized flower or star shaped cookie cutters
  6. Place evenly spaced on a large oven tray covered with non-stick baking paper and bake for 12-15 minutes until lightly golden
  7. Leave to stand for 5 minutes then transfer to a wire rack to cool
  8. Place egg white in a bowl and stir in icing sugar, 2 tablespoons at a time
  9. Stack biscuits in decreasing size using icing sugar to glue together until all biscuits have been used up
  10. Leave to set for an hour
