Gluten Free Pancake Recipe

For breakfast or dessert this gluten free pancake recipe will hit the spot. Grain-free, banana topped and smothered in maple syrup – these American-style pancakes taste just as good as they look.

  • 125g cashew flour
  • 1 tsp gluten-free baking powder
  • ½ tsp ground cinnamon
  • ½ tsp finely ground sea salt
  • 2 large eggs
  • 120ml full fat coconut milk
  • 1 tbsp virgin coconut oil (melted)
  • 1 tsp vanilla extract
  • Chopped Bananas and maple syrup, to serve



  1. In a mixing bowl, combine cashew flour, baking powder, cinnamon and sea salt. Whisk together until all lumps are gone
  2. In another bowl, combine eggs, coconut milk and vanilla extract. Whisk until well combined
  3. Add the egg mixture to the dry ingredients and mix well
  4. Heat up your VonShef Crepe Maker, or a frying pan on a medium-high heat. Once heated, add a drop of oil or butter and roll around the hot surface. Once coated, spoon out the mixture to make palm-sized pancakes
  5. Cook pancakes for 3 – 4 minutes or until its golden on the underside and you see bubbles on the top. Flip over and cook for another 3 – 4 minutes
  6. Serve hot with chopped bananas and drizzled with maple syrup

    Great receipt, very simple, but it looks extremely delicious and very healthy. Definitely something that everyone will enjoy munching on lazy Sundays and even serving to guests. After all, who doesn’t love pancakes, especially when they are healthy ones!
