Citrus Lemon Courgette Cake

What’s not to love about a cake than contains some of your 5 a day?! Light and moist with a little citrus kick – add a courgette for an uber-moist sponge.

Citrus Lemon Courgette Cake


200g courgettes (around 1 large or 1 and ½ medium sized courgettes), finely grated
150g caster sugar
1 egg
125ml coconut oil (or vegetable oil)
200g plain flour
½ tsp salt
½ tsp bicarbonate of soda
¼ tsp baking powder
1 tsp ground cinnamon
2 tsp lemon juice



  1. Pre-heat oven to 160°C/ 320°F/ Gas Mark 3
  2. Grease a loaf tin with a little butter
  3. Beat courgette, egg, sugar and oil together in a large bowl
  4. Sift flour, salt, bicarbonate of soda and baking powder together in a separate bowl. Slowly mix in the cinnamon and lemon zest
  5. Stir in the courgette mixture until combined; pour into your loaf tin
  6. Bake for around 45 minutes or until a fork comes out clean
  7. Leave to cool before serving
