Zingy Lemon Syrup Muffins

Light, zesty with fresh citrus flavour, these zingy lemon syrup muffins are deliciously dowsed in a sugared syrup. For when you need a sunny moment or a little bit of zing.

Ingredients


For the muffins
320g flour
65g sugar
1 tbsp baking powder
½ tsp salt
3 large lemons, zested and juiced
280g milk
120g melted butter
1 large egg
1 tsp vanilla extract

For the lemon syrup
110ml lemon juice, from the juiced lemons
100g sugar
Additional lemon zest to garnish

Method


  1. Preheat your oven to 190°C. Grease a 12 cup muffin tray with butter
  2. Add the flour, sugar, baking powder, salt and lemon zest to your stand mixer bowl. Use the whisk attachment to mix together
  3. In a separate bowl, whisk the milk, butter, egg and vanilla; once combined, add to the stand mixer and beat until smooth
  4. Pour the mixture into the muffin cups and bake for 20 minutes, or until a fork comes out clean
  5. Whilst baking, prepare the lemon syrup. Whisk the lemon juice and sugar together in a small pan and boil for around 5 minutes or until slightly reduced and glossy. Remove from the heat and leave to one side
  6. When the muffins are ready, immediately poke each muffin with a fork; carefully drizzle the hot syrup over each muffin
  7. Leave to cool for at least 10 minutes to let the syrup absorb into each muffin
  8. Garnish with the lemon zest, serve up and tuck in
