Watermelon Ice Lolly Recipe

These watermelon ice lollies are too good to eat – almost. Beautifully layered and full of fresh, fruity flavour, these pretty popsicles will be a smash at your next summer BBQ.

Watermelon Popsicle

Ingredients


Big chunk of watermelon
1 ½ tbsp granulated sugar
1 tsp fresh lemon juice
1 tbsp chocolate chips
75ml coconut milk
1 kiwi

Method


 

  1. Add the watermelon, sugar and lemon juice to your blender and blitz until you have a purée; skim off the foam and pour the watermelon mix into your ice lolly moulds until they’re each about two thirds full
  2. Sprinkle the chocolate chips on top and, using your ice lolly stick, gently nudge the chocolate chips downwards until they’re well spread out. Wipe the inside of the mould with a kitchen towel if the top third has gotten a little messy
  3. Add the ice lolly stick and freeze in your VonShef Ice Lolly Maker for a few minutes or place in your freezer for around 3 hours
  4. Once frozen, add a layer of coconut milk to each ice lolly mould and freeze again
  5. Whilst it’s freezing peel and slice your kiwi; add to your blender and blitz until you have a purée
  6. When the coconut milk has frozen, add the kiwi purée on top and freeze again
  7. Once frozen, remove from the moulds and serve up. If you have any difficulty removing the ice lollies from the moulds, run the moulds under warm water for a few seconds
