Thai Steamed Salmon with Basmati Rice

A sweet and tangy Thai-inspired dish that you can rustle up with easy supermarket buys. Bursting with fresh flavour, this is a must-try for all Thai food lovers.

Thai Steamed Salmon

Ingredients


1 bunch coriander, washed
12 mint leaves
1 tsp chopped fresh ginger
3 cloves garlic, crushed
1 tsp salt
1 large red chilli, finely chopped
Juice of 2 limes
1 tbsp soy sauce
2 x 175g salmon fillets
Basmati rice, washed in cold water until the water runs clear
1 lime, cut into wedges

Method


  1. In a food processor blend together the coriander, mint leaves, ginger, garlic, salt, chilli, lime juice and soy sauce; process until smooth
  2. Place the salmon fillets in a shallow dish and pour over half of the mixture. Leave to marinate for 20 minutes
  3. Turn on your electric steamer and fill the base with water; add the basmati rice to your rice bowl with 350ml of water (around a cup and a half). Place in the steamer and steam for 20 minutes, or until all of the water has been absorbed
  4. When the rice has cooked for around 15 minutes, add an extra tier to your steamer and place the marinated fillets on the top tier; steam the salmon for 6 – 8 minutes, or until the fish is cooked to your taste
  5. Take out the rice and arrange on a plate; place the salmon on top and pour the remaining half of the marinade over the fish. Serve immediately with a wedge of lime
