Spicy Strawberry Gazpacho

Bring a taste of the Mediterranean to the dinner table with this super refreshing gazpacho. Perfect for scorching summer days; the sweet taste of strawberries gets a spicy kick in this fruity twist on a Spanish classic. Serve as a mouth-watering appetiser or light lunch.

Spicy Strawberry Gazpacho Extra

Ingredients


10 strawberries
3 large tomatoes
1 small pepper
1 medium cucumber
Handful sun-dried tomatoes
1 tbsp fresh lemon juice
¼ tsp red pepper flakes
½ tsp sea salt
Handful fresh basil leaves
Handful flaked almonds

Method


  1. Prepare ingredients: divide strawberries, chop tomatoes, seed and chop the pepper and peel and chop the cucumber
  2. Set aside 5 strawberries and a few basil leaves - you’ll need them later
  3. Add the rest of the ingredients to your soup maker, process until smooth
  4. Transfer to a large bowl and place in freezer to chill
  5. When ready to serve, separate soup into bowls, add remaining strawberries, basil leaves and flaked almonds to garnish
