Spicy Cowboy Beans with Chilli, jalapeños & Bacon

When you need some fire in your belly try need these rootin’, tootin’ wild west-inspired Spicy Cowboy Beans.

Spicy Cowboy Beans 2

Ingredients


6 rashers bacon
2 onions, diced
2 large red peppers, diced
2 tins chopped tomatoes
2 tins red kidney beans
2 jalapeños, chopped
900ml water
2 tbsp chilli powder
2 tsp cumin
1 tsp ground coriander
¼ tsp cayenne pepper
1 leek, chopped

Method


  1. Cook the bacon under the grill and set to one side
  2. Drain and rinse the kidney beans and place in your soup maker
  3. Next, pour in all of the water, add the the onions, red peppers, chopped tomatoes, chilli powder, cumin, coriander and cayenne pepper
  4. Roughly chop the bacon and add to the soup maker
  5. Cook on a medium to high heat for around 30 minutes
  6. Once cooked, ladle into bowls, top with the chopped leek and serve
