Smoky Tomato Soup with Tortellini

Comfort food for a rainy day. When you want something spicy and delicious, try this smoky tomato soup from European food blogger (and lover!) Happiness is Homemade.

 Ingredients


4 tins (800g) of chopped tomatoes
1 onion, finely chopped
1 garlic clove, finely chopped
200ml plain natural yogurt
100ml vegetable stock
Small bunch of fresh basil, finely chopped
1 tbsp crushed smoked dried peppers
¼ tsp smoked ground paprika
1 pack of ricotta stuffed fresh tortellini
¼ tsp harissa paste
50g parmesan cheese, grated
Salt and pepper

 Method


  1. Add the vegetable stock, garlic, onion, crushed dried peppers, chopped tomatoes, harissa paste and chopped basil to the soup maker, stir and set for 20 minutes
  2. Once complete, remove the lid and add tortellini, parmesan and natural yoghurt. Stir in and set for another 10 minutes
  3. Once finished, check tortellini is cooked thoroughly
  4. Ladle the soup into bowls, season with salt and pepper and serve with fresh basil leaves
