Slow Cooker Super-Saver Sardinian Fish Stew

Feed the entire family – and then some – with this cheap as chips slow cooker Sardinian fish stew.

Super Saver Sardinian Fish Stew

Ingredients


1 onion, roughly chopped
5 garlic cloves, finely chopped or minced
1 red chilli, finely chopped
Handful of parsley
1 tin of tomatoes
1kg frozen white fish portions
1 tin sardines or mackerel
A few handfuls of pasta
Glug of olive oil

Method


 

  1. Add the chopped onions, garlic, chilli and half the parsley to your slow cooker with a glug of olive oil
  2. Add a pint of water and mix together in the slow cooker
  3. Cook on low for 5 hours or 3 hours on the high setting; while the stew is cooking, place your fish in the fridge to defrost
  4. An hour before you want to serve, add in the fish, pasta and half a pint of water; cook for another hour then plate up
  5. Garnish with the rest of the parsley and serve
