Slow Cooker Pork & Pumpkin Stew

Inspired by the New Mexico Posole, this hot and spicy stew is satisfying, nourishing and hardy. Packed with seasonal vegetables and spices, this gluten-free slow cooker pork & pumpkin stew, is one of our favourite one-step winter warmers.

Slow Cooker Polsole Pork Stew

Ingredients


350g pork tenderloin, diced
2 onions, chopped
3 chillies, chopped
1 tin chickpeas, rinsed
150g fresh pumpkin, cubed
250g quinoa
2 tbsp ground cumin
2 tbsp garlic powder
2 tbsp oregano
1 tin passata
1 litre chicken stock

Method


 

  1. Add all of the ingredients and cover with the chicken stock, gently stir until mixed
  2. Cook for 4-5 hours on high or 7-8 hours on low
  3. As soon as the pork is tender, mix and serve up
