Slow Cooker Paleo Sea Monster Soup

Cod & Prawn Seafood Stew

Ingredients


2 courgettes, chopped and sliced into small pieces
2 carrots, chopped into small pieces
1.5 litre chicken stock
500g (around 2 fillets) cod, Pollack, hake or whiting, cut into bite-sized pieces
100g prawns
1 bulb garlic, minced
3 tbsp chilli flakes
250g quinoa

Method


 

  1. Add the courgettes, carrots and stock to the slow cooker and cook on high for 2 hours
  2. After 2 hours, add the rest of the ingredients and cook on high for another hour or so, or 2 - 3 hours on low
  3. Serve up with fresh bread and lashings of butter
