Slow Cooker Buckwheat Chia Seed Pizza

Ingredients


 

For the pizza base
4 tbsp chia seeds
180ml water
3 tbsp unrefined whole grain buckwheat flour (gluten free)
1 tsp oregano
1 tsp sea salt
1 tbsp pine nuts, chopped or blended
2 tbsp pumpkin seeds, chopped or blended

For the toppings
Tomato paste
Handful cherry tomatoes, sliced
Handful mushrooms, sliced
1 red pepper, sliced
Half a red onion, thinly sliced
Handful of spinach, washed
100g goats cheese, crumbled

Method


 

  1. Combine the chia seeds, water, buckwheat flour, oregano and salt; mix until the mixture starts to thicken up
  2. Add chopped pine nuts and pumpkin seeds and mix until well combined
  3. Coat your slow cooker base with cooking spray. Spread out the mixture in the slow cooker and flatten to form the pizza base
  4. Spread tomato paste across the base, leaving around an inch crust; top with the tomatoes, mushrooms, pepper, onion, spinach and goats cheese
  5. Cook on high for 2 ½ hours, until the edges of the pizza start to pull away from the slow cooker and begin turning brown
  6. Leave to cool slightly then dig in!
