Slow Cooker Apple & Cinnamon Cake

Slow cooking is not just for savoury meals. This moist slow cooker apple & cinnamon cake from Corina at Searching For Spice is warmly spiced. It's almost like a dessert when it first comes out of the slow cooker. You can enjoy it warm with cream or ice cream but it's also delicious on its own as a cake the next day.

Slow cooker apple cinnamon cake

Ingredients


130g self-raising flour
½ tsp baking powder
1 tsp cinnamon
150g soft brown sugar
1 egg
1 tsp vanilla extract
50g flavourless cooking oil
2 apples, peeled and cored, sliced or diced

Method


 

  1. Mix the flour, baking powder and cinnamon in one bowl
  2. Put the sugar, egg, vanilla and oil in another bowl, whisk well
  3. Add the contents of the flour bowl to the bowl with the sugar and egg. Fold the flour in. You'll end up with a fairly dense cake batter
  4. Line the inside of the slow cooker with non-stick baking paper. Put half of the apple pieces on the bottom of the paper. Put the cake batter on top. Top with the rest of the apple pieces
  5. Drape a tea towel over the slow cooker. Put the lid on top. The tea towel will catch any condensation during cooking and stop it from dripping down onto the cake
  6. Bake on high for 1.5 hours then test with a skewer. It should come out clean. Keep checking every 15 minutes until the cake is ready. My cake needed 1hour 45 minutes
  7. Hold the baking paper to take the cake out of the slow cooker and put it on a wire rack to cool
