Raspberry Ripple Mug Cake

Fancy, fruity and fun. Simple and quick to make, this tart yet creamy cake is the perfect antidote for post-Great British Bake Off cravings.

Raspberry Ripple Mug Cake

Ingredients


1 egg
2 tbsp strawberry yogurt, well stirred
1 tbsp butter
Pinch of baking powder
¼ tsp vanilla extract
4 tbsp granulated sugar
5 tbsp plain flour
Handful of fresh raspberries
Sprinkle of icing sugar

Method


  1. Mix the egg, yoghurt, butter, baking powder, vanilla extract, sugar and flour in a mug until completely smooth
  2. Microwave for 3 – 4 minutes, or until a knife comes out clean
  3. Top with raspberries and icing sugar then tuck in
