Lovely Lime (It’s Sublime!) Sponge Cake

Tangy, sweet, light yet tart. This refreshing sponge cake is pure deliciousness. Add a few handfuls of popcorn to turn this zesty cake into an all-star bake.

Ingredients


For the cake
3 tbsp lime juice
3 tbsp water
150g plain flour, sifted
1 ½ tsp baking powder
1 dash salt
3 eggs
150g sugar
3 tsp grated lime zest

For the icing
140g unsalted butter, softened
225g icing sugar
1 tbsp vanilla extract
2 tbsp hot water
A few drops of turquoise food colouring (or 5 drops blue, 3 drops green and 1 drop yellow)
1 – 2 handfuls of popcorn (we like Ten Acre’s Captain Theodore’s Lime and Sea Salt Popcorn)

Method


  1. Preheat oven to 175°C / 350°F / Gas mark 4 and grease a large cake tin
  2. In small saucepan, heat lime juice and water until bubbles form around the edge of pan; remove from the heat and set aside
  3. Sift flour with baking powder and salt; set aside
  4. In your stand mixer, or using an electric mixer, beat eggs at a high speed until thick and light yellow
  5. Gradually add sugar, beating until mixture is smooth and well blended; this should take around 5 minutes
  6. At a low speed, blend in flour and beat until mixture is smooth
  7. Add the lime juice, water and lime zest, beating until just mixed
  8. Pour batter into the greased cake tin and bake for 30 minutes, or until a knife comes out clean. Leave to cool for a few minutes
  9. Lightly run a knife around the edges of the cake tin; turn the cake tin over and pat firmly on the back. Gently lift up the cake tin – the cake should fall away easily, leave to cool fully whilst you prepare the icing
  10. For the icing: using your stand mixer or an electric mixer, beat together the butter and sugar until well combined. Add the vanilla and water and beat until smooth and creamy
  11. Using a rubber spatula, spread ¾ of the icing over the sides of the cake
  12. Add the food colouring to the rest of the icing and mix well; spread the now turquoise icing over the top of the cake and finish with a handful of popcorn on top
