Easy Christmas Chorizo & Egg Canapes

Forget stressing and slaving in the kitchen - our totally to die for chorizo and egg canapés are super quick and easy to create. Delicious for breakfast, brunch or as an anytime appetiser, these flaky, smoky squares definitely won’t disappoint.

Ingredients


Serves 4
1 sheet ready rolled puff pastry
75g grated Parmesan cheese
1 chorizo sausage, cut into 16 ¼ inch slices
4 eggs
Coriander, to garnish

Method


 

  1. Preheat oven to 200°C / Gas Mark 6
  2. Lay out the pastry sheet, cut into 4 squares and bake for 10 minutes or until lightly golden
  3. Remove from oven and, using a metal spatula, make a square indent in the centre of each pastry - leaving a border
  4. Spoon Parmesan onto each square, top with chorizo slices and crack an egg into the centre
  5. Bake for a further 10 minutes until eggs are cooked
  6. Garnish with coriander before serving
