Chocolate Chip Cookie Ice Cream Sandwiches

The ultimate childhood classic. Chocolatey, gooey and wonderfully messy. Dig into these chocolate chip cookie sandwiches for a delicious blast from the past – your 10-year-old self will salute you.

Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients


150g salted butter, softened
80g light brown muscovado sugar
80g granulated sugar
2 tsp vanilla extract
1 large egg
225g plain flour
½ tsp bicarbonate of soda
¼ tsp salt
200g plain chocolate chips or chunks
Vanilla ice cream, to serve

Method


  1. Preheat your oven to 190°C / 375°F / Gas Mark 5
  2. Line two baking trays with butter or coconut oil
  3. Place the butter and sugars into a bowl and beat until creamy; add the vanilla and egg, mix well
  4. Sieve the flour, bicarbonate of soda and salt over the mixture and mix in
  5. Add the chocolate chips and stir
  6. Using a spoon, place heaped mounds of the mixture well apart on the baking trays
  7. Bake for 8 – 10 minutes until golden brown on the edges and still soft in the centre
  8. Leave to cool for 5 minutes and take the ice cream out of the freezer to soften slightly
  9. Place half of the still warm cookies upside down, use a spoon to layer on the ice cream. Place another cookie on top then eat straight away!
