Vanilla, Blueberry & Coconut Popsicle Recipe

If you love all things creamy and coconutty – then this is the summer ice lolly for you. Filled to the brim with coconut milk, tart blueberries and a dash of vanilla – this popsicle is designed to be savoured.

Blueberry Popsicle Recipe

Ingredients


250ml coconut milk
Handful of blueberries
A few drops of vanilla extract
2 tbsp agave nectar or honey

Method


 

  1. Pour the coconut milk into each of the ice lolly moulds until you’ve filled up a third of the mould; add in the ice lolly sticks and place in VonShef Frozen Ice Lolly Maker for a few minutes or in your freezer until frozen
  2. Whilst the coconut milk is freezing, add the rest of the coconut milk, blueberries, vanilla and agave nectar into your blender and blitz until smooth and creamy
  3. Add the blender mix to the moulds and freeze for a few minutes using the VonShef Frozen ice Lolly Maker or in your freezer overnight
  4. Once frozen – tuck in!
