BBQ Pizza Recipe

Think your barbeque is just for sausages and burgers? Think again. Try something a bit different and cook up this BBQ pizza on - you've guessed it - your barbeque. Charred to perfection, deliciously crispy and barbequed in minutes. Make your pizza base from scratch or go for store-bought, either way - you'll end up with one tasty, smoky pizza.

BBQ Pizza Recipe

Ingredients

For the pizza base
1kg white bread flour
650ml (2 and a half cups) warm water
15g dried yeast (two small sachets)
4 tbsp extra virgin olive oil
1 tsp fine sea salt
1 tbsp white sugar

For the sauce
A tin or carton passata
1 garlic clove, crushed
1 tbsp dried basil

For the topping
1ball of mozzarella, sliced
Handful of cherry tomatoes, halved
Rocket leaves
Any other toppings you fancy (any raw meats will need to be cooked beforehand)

Method

For the pizza dough:

  1. Sieve the flour and salt onto a clean work surface and make a well in the middle
  2. In a jug mix the yeast, sugar and olive oil into water and leave for a few minutes to settle
  3. Pour the jug mixture into the well and, using a fork, gradually mix in the flour from the sides
  4. Keep mixing until it starts to come together; work the rest of the flour in with your hands and knead until you have a smooth and springy dough
  5. Place the ball of dough into a large flour-dusted bowl and leave for an hour to prove
  6. After an hour, take out the dough and place on a flour-dusted surface and knead again
  7. Divide the dough into little balls – as many as you want to make pizzas (this dough should make around 6 – 8 pizza bases)
  8. Roll one of the dough balls out until you’ve got a thin pizza base

For the sauce:

  1. Mix the passata, garlic and basil together and spread a thin layer over the pizza base
  2. Dot the mozzarella cheese and sliced cherry tomatoes around the pizza
  3. Preheat your barbeque – you want it to be roasting hot. The barbeque has to be able to cook the toppings on top, not just the base
  4. Using a cake lifter, pizza peel or thin board lift and slide the pizza onto the barbeque grill

To barbeque:

  1. If your barbeque has a lid, close over the pizza, if not use a preheated roasting pan to cover the pizza
  2. Cook for a few minutes then check on the pizza; safely wiggle the pizza a few inches so the base doesn’t stick to the grill
  3. Replace the lid or roasting pan, and cook for a few more minutes, or until the base is crispy
  4. Remove from the barbeque using your cake lifter, pizza peel or thin board
  5. Drizzle with olive oil and add the rocket leaves
  6. Enjoy
