3 Ingredient Lemon Curd Coconut Macaroons

Bursting with the tropical taste of coconut and zesty lemon, these macaroons are seriously moreish. Delightfully crunchy on the outside, soft and chewy in the middle, these extraordinarily easy one-bowl wonders prove that baking doesn’t have to be complicated.

Ingredients


400g desiccated coconut
400ml sweetened condensed milk
100g lemon curd

Method


  1. Preheat your oven to 165°C /  325°F / Gas Mark 3
  2. Add the desiccated coconut and the sweetened condensed milk to a large bowl, mix thoroughly
  3. Use a teaspoon or ice cream scoop to create individual macaroons, placing them on a non-stick or lined baking tray, use your fingers to tease the macaroons into a cone shape
  4. Bake for 10 - 12 minutes, or until lightly browned around the edges
  5. Leave to cool
  6. Use a teaspoon to gently slice the top off the macaroons then press the middle down slightly with your finger
  7. In the middle of the macaroon add a dollop of lemon curd
